Super healthy Pina Colada Overnight Oats recipe – happily borrowed from Simon Gault!

Ingredients

  • 1 CUP Steel-Cut Oats

  • 1 CUP Coconut Milk

  • ¾ CUP Coconut Yoghurt

  • ½ CAN (100-120 grams) Pineapple Chunks or the equivalent of fresh.

  • 1 TSP Vanilla Essence

  • 1 TBSP Chia Seeds (also helps with thickening)

  • ¼ CUP Shredded Coconut

  • 1 TBSP Coconut Sugar

  • A PINCH of Salt (try Simon’s Murray River salt flakes)


  • OPTIONAL GARNISHES
  • 2 TBSP Shredded Coconut

  • 2 Brazil or Almond Nuts (grated)

  • 2 Maraschino Cherries

Directions

  • Combine the ingredients in a suitable size sealable bowl (try our Clear Bowls). Stir well to combine.
  • Place seal on top, and leave in the fridge overnight.
  • In the morning, remove the seal and serve!
    Add a little more nut milk, if needed, to loosen it up until you get the consistency you want. Serve in a glass, Tupperware container or breakfast bowl. Finally top with a grated Brazil nut, shredded coconut and a cherry.
