Super healthy Pina Colada Overnight Oats recipe – happily borrowed from Simon Gault!
1 CUP Steel-Cut Oats
1 CUP Coconut Milk
¾ CUP Coconut Yoghurt
½ CAN (100-120 grams) Pineapple Chunks or the equivalent of fresh.
1 TSP Vanilla Essence
1 TBSP Chia Seeds (also helps with thickening)
¼ CUP Shredded Coconut
1 TBSP Coconut Sugar
A PINCH of Salt (try Simon’s Murray River salt flakes)
2 TBSP Shredded Coconut
2 Brazil or Almond Nuts (grated)
2 Maraschino Cherries
- Combine the ingredients in a suitable size sealable bowl (try our Clear Bowls). Stir well to combine.
- Place seal on top, and leave in the fridge overnight.
- In the morning, remove the seal and serve!
Add a little more nut milk, if needed, to loosen it up until you get the consistency you want. Serve in a glass, Tupperware container or breakfast bowl. Finally top with a grated Brazil nut, shredded coconut and a cherry.
